This spicy cucumber salsa is SO EASY and quick to make! It is delicious to eat as is with tortilla chips and perfect to pair with fish tacos.

This spicy cucumber salsa has me dreaming of summer with a margarita in one hand and a bag of chips in the other! Whip up a batch of this easy spicy cucumber salsa if you want a salsa option with a unique kick.

This salsa is perfect to eat with tortilla chips or it is the perfect topping for fish tacos, quesadillas, enchiladas, and more! You won’t be able to get enough of this healthy salsa that is refreshing, yet spicy at the same time.

Why You Will Love This Salsa

  • It’s a breeze to make! This recipe is so simple to make. It requires some chopping and prep work, but it’s not difficult – I promise!
  • FLAVOR! Despite cucumbers being the base of this recipe, this salsa has flavor! The jalapeno adds the spice and the garlic, onion, and cilantro add more of the traditional salsa flavors you are used to. 
  • The crunch! The crunch that the cucumbers deliver in this salsa is amazing. Compared to your normal tomato-based salsa, the crunch is off the charts in this recipe!

Spicy Cucumber Salsa Ingredients

  • Mini Cucumbers – Mini cucumbers, specifically, are best for this recipe. Why? Because they don’t have large seeds. This saves time when preparing the salsa because you don’t have to cut out the seeds like you would have to if you used regular cucumbers!
  • Jalapenos – This is what gives this salsa the spicy kick!
  • Red Onion – Red onion adds more flavor than a yellow or white onion would and the purple color is beautiful in this salsa!
  • Cilantro – The cilantro in this recipe can be adjusted if you want more or less of the cilantro flavor. 
  • Lime Juice – Be sure to use lime juice that is freshly squeezed!
  • Garlic Cloves – Fresh garlic cloves are best, but jarred, minced garlic will also work. 
  • Salt and Black Pepper – Adjust these as needed in the salsa!

How to Make Spicy Cucumber Salsa

  • Toss together cucumbers, jalapenos, red onion, cilantro, lime juice, garlic cloves, salt, and black pepper.

  • Taste and season with more salt and black pepper as needed. 
  • Cover and refrigerate for 30 minutes or until ready to serve.

Serving Suggestions

Serve with tortilla chips or with any Mexican dish. My favorite way to serve this salsa is with fish or shrimp tacos!

Storage Recommendations

This recipe is great when enjoyed fresh or within two days. In my opinion it is best the next day after the flavors meld together for a bit! Store leftovers in an airtight container in the fridge.

Tips

  • Too mild? Don’t remove the jalapeno seeds or add an additional jalapeno for more kick!
  • Too spicy? Only use one jalapeno instead of two.

Ingredients
  

  • 1 package Mini Cucumbers diced (approximately 6 mini cucumbers)
  • 2 jalapenos finely diced
  • ½ red onion diced
  • ½ cup cilantro chopped
  • Juice of 2 limes
  • 2 garlic cloves minced
  • ⅛ tsp salt plus additional to taste
  • Black pepper to taste

Instructions
 

  • Toss together cucumbers, jalapenos, red onion, cilantro, lime juice, garlic cloves, salt, and black pepper.
  • Taste and season with more salt and black pepper as needed.
  • Cover and refrigerate for 30 minutes or until ready to serve.
