Spicy Cucumber Salsa
This spicy cucumber salsa is SO EASY and quick to make! It is delicious to eat as is with tortilla chips and perfect to pair with fish tacos.

- 1 package Mini Cucumbers diced (approximately 6 mini cucumbers)
- 2 jalapenos finely diced
- ½ red onion diced
- ½ cup cilantro chopped
- Juice of 2 limes
- 2 garlic cloves minced
- ⅛ tsp salt plus additional to taste
- Black pepper to taste
Toss together cucumbers, jalapenos, red onion, cilantro, lime juice, garlic cloves, salt, and black pepper.
Taste and season with more salt and black pepper as needed.
Cover and refrigerate for 30 minutes or until ready to serve.
- Too mild? Don’t remove the jalapeno seeds or add an additional jalapeno for more kick!
- Too spicy? Only use one jalapeno instead of two.
