Simple Lemon Sugar Cookies

Ingredients
  

  • 3 cups all-purpose flour
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup butter softened
  • 1 ½ cups white sugar + ½ cup white sugar (for rolling)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoon lemon zest from 1 large lemon
  • 2 tablespoon fresh lemon juice

Instructions
 

  • Preheat oven to 375℉. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  • In a large bowl, cream together the butter and 1 1/2 cups sugar until smooth. Beat in egg, vanilla extract, lemon zest, and lemon juice. Gradually blend in the dry ingredients.
  • Roll rounded tablespoonfuls of dough into balls. If desired, roll dough balls into 1/2 cup white sugar. Place onto ungreased cookie sheets. Press dough balls down slightly with the bottom of a glass.
  • Bake 10 to 12 minutes in the preheated oven, or until golden. Let stand on a cookie sheet for two minutes before removing to cool on wire racks.

Notes

  • Want more lemon flavor? Try adding more zest to amp up the lemon flavor even more! You can also try adding lemon zest to the sugar that the cookies are rolled into.
  • Save for later? These cookies will store well on the counter in an air-tight container for a week. They will also store frozen (after baked) for three months.
